Orange and Apple Relish
1 ½ oz. Red Pepper (minced)
1 ½ oz. Shallot (minced)
3 oz. Granny Smith Apple
1 Orange
2 tbsp. Cilantro (chopped)
¼ cup Brown Sugar
¼ cup White Vinegar
Salt and Pepper to taste
In small saucepan, mix brown sugar and vinegar together and bring to boil. Add pepper and shallots. Remove from heat. Add apple and cilantro. Supreme orange and add segments and juice. Season with salt and pepper. Drain and serve.
Yield: 1 cup
